The Pro Series ovens are built with 3 inches of ceramic fiber insulation and a 1.5mm thick 304 stainless steel interior, encased in a 1.5mm lacquered aluminum outer shell. The design of the oven chamber itself is particularly noteworthy, as it prevents heat loss through the stack. Unlike most wood-fired ovens, where heat escapes through the stack even when the door is closed, the Pro Series ovens are designed to seal the oven chamber, allowing for maximum heat retention and cooking versatility.
